Pfeffernusse

Pfeffernusse are one of my husband's favourite cookies... He has them with tea, he dunks them in milk, he crumbles them on ice-cream, he sneaks them out of the jar when (he thinks!) nobody is watching...! 
I love the smell of the spices as they cook and the smile on his face when he walks into the kitchen... :)

1. Cream 250g soft butter and 300g dark brown sugar for 1 minute @ speed 4 (optional: use Butterfly).

2. Add 160g golden syrup and mix 20 seconds @ speed 4.

3. Add 2 eggs, one at a time, via MC hole while blades are running, 20 seconds @ speed 3, and then remove Butterfly (if using).

4. Add 2 Tbsp cocoa (or cacao powder), 1 1/2 tsp cinnamon, 1 tsp all spice, 1/2 tsp each ground cloves, nutmeg, ginger and white pepper, 1 tsp baking powder and 680g plain flour (700g if using spelt flour). Combine 20-30seconds @ speed 4-6 (using spatula to asssit) and then 'knead' 2 minutes @ Interval (using spatula to assist if necessary).

5. Remove dough onto Thermomat, knead briefly and wrap. Allow to sit 30 minutes while oven preheats to 180C.

6. Roll dough into walnut-sized balls and flatten slightly, if desired. Bake 12-15 minutes (depending on size and shape of dough balls) and cool on tray for 5 minutes before removing to a rack to cool completely.

7. Decorate with royal icing using piping bag to create preferred designs.

8. Store in air-tight container for 1 week (if they last!) or freeze to use later.

(Makes 6-7 dozen pfeffernusse)

It's a Crazy Little Thing Called... Muesli??


I saw a post for Elvis Granola over at Eat, Live, Run and the kids begged me to make it. We have just run out of our normal muesli so I thought I would give it a go - with some Thermomix and personal preference tweaking, of course! (We replaced some of the original ingredients with spelt flakes, rapadura, agave, coconut or macadamia oils, non-peanut-nut-butter, cacao, raw nuts, etc and added some coconut flakes, sultanas and cranberries along with slightly altering the name!)

1. Preheat oven to 135-140C.

2. Weigh into Thermomix bowl: 50g coconut/macadamia oil, 70g homemade nut butter (our recipe is based on this one from Quirky Cooking), 80-100g sweetener (we used 20g rapadura, 40g maple syrup, 30g agave nectar), 1/2 tsp sea salt, 1 tsp cinnamon. Cook 10 mins @ Varoma @ speed soft.

3. Add 400g spelt flakes, 150g seeds (we used 50g each of sunflower seeds, pepitas and chia seeds), 150g raw nuts (we used 50g each of almonds, walnuts and macadamias), 50g flaked coconut. Combine 5 mins @ 100C @ REV speed 2.

4. Spread onto lined baking trays and bake 40 minutes, stirring occasionally.

5. After 20 minutes of baking, we added 200g organic sultanas and 100g dried cranberries (split over the trays) and a drizzle of agave.

6. Spread muesli mix out on Thermomat to cool completely. We added cacao nibs before storing in tightly sealed containers. (Well, that's not quite true - we had to have a bowl to try it out first... YUM!!)
"The King" at our house had a sample... his verdict? "Thank you, thank you very much...." :)

Spelt Honey Graham Crackers


Weigh 450g wholemeal spelt flour (you could grind fresh spelt, but I have run out and am waiting for my next bulk order!), 150g rapadura, 1 tsp baking soda and 3/4 tsp salt (reduce to 1/4 tsp if using salted butter) into the bowl. "Sift" together for 20seconds@speed4.

Add 100g unsalted butter (slightly frozen in 2cm cubes) and pulse to a coarse meal (4x 1second@Turbo).

Add 110g honey (the good stuff!), 2 Tbsp molasses (or 1 Tbsp blackstrap molassess and 1 Tbsp golden syrup), 75g milk and 2 tsp vanilla extract. Combine to a soft/sticky dough, 10secs@speed5-6.
Tip dough out onto a *well floured* Thermomat, knead lightly, wrap and allow to rest 15-20 mins.


Unwrap dough and roll out on generously floured Thermomat. (Yes, this spelt stuff gets sticky fast!) You can roll the dough thick-ish or quite thin... obviously this will determine your final result. 


You can cut out shapes (the MC is a great size!) or you can cut out rectangles to score later. Place your chosen shapes onto a lined baking tray and cool - either in the fridge for 40 minutes or in the freezer for 20 minutes.



Preheat your oven to 175C and take a tray out of the fridge/freezer. You can score your rectangles into 'fingers' or otherwise score your shapes as you please. Pierce rows or circles, etc of 'dots' with the blunt end of a skewer (or similar object) to allow baking to be uniform. 




Optional: Sprinkle with 1 Tbsp rapadura, 1 tsp cinnamon, and a pinch good salt mixture.


Bake 12-18 minutes - depending on thickness and shape - and allow to cool 5-10 minutes on the tray before cooling completely on a rack.



And now the fun begins - whipped frostings, homemade icecream, melted chocolate, toasted marshmallows, royal icing, etc... :)

Thermomix & Weber-Q Teamwork!

 Well- I have always believed that teamwork and cooperation can achieve much. We have just acquired a Weber-Q to team up with the Thermomix, and the outcomes are looking very promising! 
Tonight we tried it out as a pizza oven and now have a new standard for pizza at out house. Homemade spelt base (TMX) rolled thin and laid on a bed of polenta meal, topped with homemade chunky tomato pizza sauce (TMX), baby spinach, steamed chicken breast (steamed in TMX), roasted bacon and lashings of mozzarella & parmesan cheese (grated in TMX) - YUM! Crust was crunchy on the bottom but soft in the middle, toppings were hot-hot-hot and cheese was golden and gooey... so so so delicious!

We finished our sunset dinner on the deck with a batch of Luigi's 40 Second Biscuits (TMX EDC) baked on the hot pizza stones in the Weber-Q... meltingly-crumbly and warm, chased by a glass of cold milk... mmmmmm!

I think I could get used to this!! :)

Raw Bliss Balls

What is your favourite 'pick-me-up' snack? I love Quirky Cooking's Raw Bliss Balls!(See here for another one of her treat ball recipes with some links to great info)

This batch or RBBs started with freshly ground Cacao Nibs, then we added Medjool dates, handfuls of raw nuts (Almonds, Walnuts and a few Cashews), a few spoonfuls of our homemade Nut Butter, a sprinkling of Rapadura and finely-ground Pink Salt and a drizzling of Agave... so YUMMY!

(Warning: these little delights are highly addictive! And, while cacao doesn't contain caffeine, it does contain theobromine - a more gentle, but still effective stimulant. So be careful not to eat too many at once - especially before bedtime!)

Fireside Mexican Feast with Spelt Tortillas

 We enjoyed the last night of 'fire season' (we have a total fire ban from today until April) with a fireside mexican dinner: homemade spelt tortillas with all the fixings! YUM!
Do you make your own tortillas/wraps? We love the spelt variety from Quirky Cooking - super easy and super delicious! There is nothing that compares with fresh, homemade tortillas! :)
And - of course - there must be dessert! Our tradition is to spread the fresh spelt tortillas with butter and sprinkle with cinnamon&sugar, then toast them over the fire, roll them up and eat them... Mmmmmm... :)

Strawberries & Mangoes with Lime Cream Sauce


This recipe requires some prior preparation, but is well worth the effort!

The Lime Cream Sauce is super easy to make...
Mill 200g raw sugar 20seconds@Speed9.
Insert Butterfly,add 6 egg yolks and cream 1minute@Speed4.
Add 450g single cream and the thinly peeled rinds of 2 limes - keeping the rind pieces large (you will need the juice later) and cook for 15mins@90degrees@SpeedSoft.
Set aside to cool until ready to serve.

Meanwhile...
Clean and slice 500-700g of fresh strawberries and pour over juice of 2 limes (at least 4Tbsp) and 2 Tbsp icing sugar (pre-milled).
Toss to coat and cool until ready to serve. We also slice up mangoes and chill them until we are ready to serve - you could add any fruit that you fancy! :)

Just before serving...
Whip 250-300g double cream (thickened cream would also work) until thick - using Butterfly @Speed4 - between 20seconds-1minute. Keep a close eye on the cream!!
Remove lime rind from chilled Lime Sauce and fold into cream - 30seconds-1minute@ReverseSpeedSoft - until smooth but not overbeaten.

To serve...
Layer strawberries, mangoes and lime cream sauce in glass dishes. Top with extra double cream and indulge!

Note: You may not use all of the Lime Cream Sauce while layering with the fruit... but do not fear! It is our experience that you always want to add more sauce as you go along - it is very morish! :)

Lasagne Cupcakes... are you serious??

Lasagna cupcakes?!? Indeed! :)
We used homemade spelt pasta (rolled super thin and cut into wonton-size squares), super yummy bolognese sauce (thanks for the recipe, Patrice!), a Ricotta Spread using Super Kitchen Machine's Ricotta, EDC bechamel sauce and lashings of grated cheeses... a HUGE hit with kids and adults alike! SO much fun to make and eat!! :)

Ladies Kisses - Lemon Shortbread dressed with Berry Vienna Cream
These little treasures are a marriage of Shortbread/Melting Moment meets Baci Di Dama (Italian Ladies Kisses)... and what a marriage they make! I was particularly pleased at the vibrant colour achieved simply by using fresh berries in the Vienna Cream.

Ladies Kisses

First things first:

1. Preheat the oven to 180C/350F and prepare baking trays (I line mine with baking paper).

Lemon Shortbread:
 
1. Place 150g organic raw sugar, 100g raw almonds, and the rind of 1 organic lemon into Thermomix bowl. Grind 1minute@speed9


2. Add 250g softened butter (we make our own in the Thermomix) and blend 20seconds@speed5.

3. Add 60g organic cornflour, 300g organic plain flour, 1 organic free-range egg yolk, and 60g lemon juice (juice from the same lemon that you removed the rind off). Pulse 10-20seconds@Turbo until blended, scraping down bowl as necessary.

4. Shape dough into 1.5-2cm balls and press gently with a fork.

5. Bake 12-15 minutes until firm.  Cool on the tray for 10 minutes then transfer to a rack to cool completely. Store in an air-tight container until you are ready to use them.

NB: The undressed biscuits can be stored in the freezer for up to 3 months.

Berry Vienna Cream:
 
1. Insert butterfly into Thermomix.

2. Place 120g softened butter into Thermomix bowl. Cream 30seconds@speed4.
 
3. Scrape down bowl. Add 100g fresh berries (we used 60g blueberries & 40g blackberries in the batch for the photos) and 130g icing sugar (we grind our own from organic raw sugar).  Cream 30seconds@speed4.


4.  Scrape down bowl. Add 120g icing sugar.  Cream 30seconds@speed4.

5.  Scrape down bowl. Add 130g icing sugar.  Cream 30seconds@speed4.

6.  Scrape down bowl. Add 130g icing sugar.  Cream 2minutes@speed4. 
7. Allow to rest 10-30 minutes until cool and thick. Spoon Vienna Cream into piping bag fitted with wide tip.

8. Pipe Vienna Cream onto Shortbreads and sandwich together.

9. Enjoy!


Variations:
 

Raspberry Shortbreads -  omit the lemon rind & juice, substitute with 60g fresh raspberries.

Blueberry Shortbreads - omit the lemon rind & juice, substitute with 60g fresh blueberries.

Vanilla Vienna Cream - omit the 100g berries, substitute with 1tsp vanilla extract and 5Tbsp milk.

Upside-Down Toffee Apple Brownies

I have always understood brownies to have a chocolate foundation or, in the event of blondies, at least be lacking in raising agents. However, I found a recipe in a dedicated Brownie Cookbook for the basis of these little gems (which have no chocolate but do contain raising agents!). You can decide for yourself if they are worthy of the 'brownie' title... in my house, they will be inhaled regardless!

Upside-Down Toffee Apple Brownies

First things first:

1. Preheat the oven to 180C/350F and line a 23x32cm pan with baking paper.

2. Place 100g pecans (or macadamias) into Thermomix bowl and chop  2seconds @speed4. Set aside.

Topping:
 
1. Place 150g dark sugar (coconut palm or brown or even rapadura) and 120g cubed butter into Thermomix bowl. Cook 5minutes@70deg@speed5. Pour into lined baking tin.
 
2. Arrange cored and thinly sliced dessert apples (we used Fujis) over the toffee mixture.

Brownies:
 
1. Place 100g dates and 500g cored and quartered apples (we used Granny Smiths) into Thermomix bowl. Chop 10seconds@speed5.
 
2. Add 250g butter, 200g rapadura sugar, 4 eggs, 1 tsp allspice, 1/2 tsp each ground cinnamon and ground nutmeg, 1/4 tsp each ground ginger and ground star anise. Combine for 10seconds@speed4 until just blended.
 
3. Add 400g plain flour, 2 tsp baking powder, 1 tsp baking soda and previously chopped pecans. Combine 10-20seconds@speed4 (may need assistance from spatula) until well blended. Pour over toffee and apples in baking tin.

Bake 45-50 minutes until firm and golden. Cool in the tin for 10-15 minutes, then turn out and cut into squares. Enjoy!
