Fireside Mexican Feast with Spelt Tortillas
We enjoyed the last night of 'fire season' (we have a total fire ban from today until April) with a fireside mexican dinner: homemade spelt tortillas with all the fixings! YUM!
Do you make your own tortillas/wraps? We love the spelt variety from Quirky Cooking - super easy and super delicious! There is nothing that compares with fresh, homemade tortillas! :)
And - of course - there must be dessert! Our tradition is to spread the fresh spelt tortillas with butter and sprinkle with cinnamon&sugar, then toast them over the fire, roll them up and eat them... Mmmmmm... :)

Strawberries & Mangoes with Lime Cream Sauce
This recipe requires some prior preparation, but is well worth the effort!
The Lime Cream Sauce is super easy to make...
Mill 200g raw sugar 20seconds@Speed9.
Insert Butterfly,add 6 egg yolks and cream 1minute@Speed4.
Add 450g single cream and the thinly peeled rinds of 2 limes - keeping the rind pieces large (you will need the juice later) and cook for 15mins@90degrees@SpeedSoft.
Set aside to cool until ready to serve.
Meanwhile...
Clean and slice 500-700g of fresh strawberries and pour over juice of 2 limes (at least 4Tbsp) and 2 Tbsp icing sugar (pre-milled).
Toss to coat and cool until ready to serve. We also slice up mangoes and chill them until we are ready to serve - you could add any fruit that you fancy! :)
Just before serving...
Whip 250-300g double cream (thickened cream would also work) until thick - using Butterfly @Speed4 - between 20seconds-1minute. Keep a close eye on the cream!!
Remove lime rind from chilled Lime Sauce and fold into cream - 30seconds-1minute@ReverseSpeedSoft - until smooth but not overbeaten.
To serve...
Layer strawberries, mangoes and lime cream sauce in glass dishes. Top with extra double cream and indulge!
Note: You may not use all of the Lime Cream Sauce while layering with the fruit... but do not fear! It is our experience that you always want to add more sauce as you go along - it is very morish! :)

Lasagne Cupcakes... are you serious??
Lasagna cupcakes?!? Indeed! :)
We used homemade spelt pasta (rolled super thin and cut into wonton-size squares), super yummy bolognese sauce (thanks for the recipe, Patrice!), a Ricotta Spread using Super Kitchen Machine's Ricotta, EDC bechamel sauce and lashings of grated cheeses... a HUGE hit with kids and adults alike! SO much fun to make and eat!! :)
